My kitchen miracles – VIII – zucchini pizza bites

Although I’m not done about writing about my kitchen disasters, writing a miracle story helps the readers to know that this lady is not crazy and always creating unedible items.

Circa 2020 (I know, again! πŸ˜‰)

I wanted to create some bite-sized snacks that were a bit healthier than the cookies, biscuits and savouries that we usually enjoy with our beverages. I wanted to craft such savouries that actually contribute towards body’s nourishment while satisfying the pesky little tastebuds that were extra active during the WFH Covid-era.

And I ended up creating a savoury item that did not leave you craving for more unlike the scientifically designed crackers or chips. 

I had come across bite-sized pizzas on Instagram and for once, I imagined – why not consider a vegetable as a base for these pizza bites? A vegetable that cooks easily and can serve as a stable base?

And bam! I could see the zucchini pizza bites rolling in the microwave oven in my mind while the mozzarella melted! ☺️

So I cut zucchini in thicker slices and topped them up with halved cherry tomatoes, bell peppers, oregano, thyme and mozzarella cheese.

No one talks about the pain of sprinkling the mozzarella cheese over these mini bites. Good quality mozzarella is expensive and each and every drop of it is precious!

So you have to be careful while sprinkling mozzarella so that it does not fall away too much from the zucchini. 

The pain in your fingers after this precise activity is unimaginable and no, no amount of a recipe gone excellent will cure it. Those influenzas are lying to you that pain can be cured by just looking at your masterpiece of a dish. 🀣

You bake those pizza bites and let them out while our dear mozzarella is sizzling – what a sight!

One bite and you can taste the juicy texture of zucchini, the tanginess of juicy cherry tomatoes and the nutty stringiness of mozzarella. 

Absolute perfection!
