The perfect avocado never exists!
And if they do, they are ripened in an artificial manner.
Because the perfectly ripened avocado only exists in the time when you are not bothered about it! Or when you are in a parallel universe! 🤓
Come Covid-19, (Yes, we are still in that cooking disaster era) people were going gaga over avocadoes and their health benefits, and adding avocadoes to every possible dish.
I have had guacamole and avocado ice-cream before, thanks to the restaurant invitations, but I had never used avocado in cooking.
Although there is not much cooking to avocado – you just have to scoop out the pulp that is still green (😉), cut it in different geometrical shapes or mash it altogether and add basic seasoning to it.
How you use it with other ingredients, especially stronger ingredients, is the real test of your cooking skills.
I began this challenging journey of using avocadoes in December, 2020 during the first winter of Covid. The iceberg lettuce leaves were in their prime and I love using them in sandwiches.
This time, I decided to prepare a club sandwich with 2 layers. I added lettuce leaves and guacamole on the base layer of both the layers and then added egg fry on one and sautéed vegetables on the other layer.
Sounds and looks appetising? Right?
Explosion of flavours and textures? Hello deliciousness!

But who knew that our humble Harvest-gold-ki-bread has not got the structural integrity to hold that much wet guacamole? There is a reason that these lettuce leaves exist in a sandwich – to prevent the leaky spreads from touching the bread.
Because, if, accidentally the guacamole touches the bread, then your bread will start disintegrating.
And your London-bridge-of-a-club-sandwich would fall down!
And even if the naughty guacamole is not able to seek the the hiding bread, when you press the club sandwich to bite into it, this naughtiness of a spread will push through the other toppings to break the structure if the sandwich.
And you will have bits and pieces of the dish that you prepared!
Lesson learnt – if you have to use guacamole, use a sturdy sourdough or a focassia or bagel buns. They can withstand the Leaning-tower-of-monstrous-toppings, guacamole should be a feather for them to carry!
